Winemaker’s Production Notes: This Blanc de Blanc sparkling wine began with a clean and slow fermentation in stainless steel tanks, at 55° F, producing a crisp and refreshing base wine. The second fermentation, where the bubbles are produced, was carried out by a Charmat Method or “Italian Method” allowing the development of a beautiful perlage and elegant secondary flavors. This Extra Brut Sparkling evokes a refreshing and vibrant taste. Inspired by the famous Italian Prosecco, this Sparkling was crafted in a Low Alcohol and Low Calories Style .
