Before starting the fermentation of our reserve red wines we use a special technique named “Saignée” (from French). This is the practice of removing (“bleeding off”) some of the juice from the must in order to more deeply concentrate the tannins, color and flavor in the red wines. This rose was made with 45% Merlot, 30% Cabernet Sauvignon and 25% Petite Sirah juices allowing one day of maceration over their skins. The rich juice produced was cleaned by cold settling and fermented at low temperature like a regular white to preserve all the fresh fruity aromas and flavors in a dry medium body rose style.
