Ingredients
2 cups fresh or frozen raspberries
6 tablespoons water
2 tablespoons sugar
Lynfred’s Sparkling Brut*
Fresh or frozen raspberries, for garnish
Instructions
In a small saucepan, combine the raspberries, water, and sugar. Bring to a gentle simmer over medium heat, stirring and lightly mashing the raspberries as they soften, until the sugar is fully dissolved.
Remove from heat and strain the mixture through a fine-mesh sieve to remove the seeds. Allow the raspberry syrup to cool, then refrigerate until chilled.
To prepare the cocktail, add 1 teaspoon of raspberry syrup to a champagne flute, then garnish with a few raspberries. Top with sparkling wine and serve immediately.
Notes
Lynfred’s Demi-Sec is an excellent choice if you prefer a slightly sweeter mimosa.
The raspberry simple syrup yields approximately ½ cup.
