Ingredients
24 Deglet Noor dates, pitted*
4 oz cream cheese, softened
¼ cup crumbled blue cheese*
24 pecan halves
3 pieces of crispy bacon, finely chopped
2-2 ½ tsp chives, finely chopped

Directions
In a bowl, mix together the cream cheese and crumbled blue cheese. Then add the bacon and the chives and mix until fully incorporated. Next, open the dates “like a book” and stuff each date with roughly ½ tsp—1 tsp full of the cheese mixture. Then, top each stuffed date with a pecan half. Optional: You can garnish with more chives if desired.

Tips
*I recommend Deglet Noor dates over Medjool because they have a nutty flavor and less sweetness. But if you love Medjool dates, feel free to use those instead. You may need more mixture to stuff each date because the Medjool is larger.
*I used a creamy, mild blue cheese; and it was more like a heaping ¼ cup because I love blue cheese!
*I used my hands instead of a mixer to mix the stuffing. After all, your hands are the best tool in the kitchen!
*I prefer the 2 ½ tsp of chives. But if someone is onion sensitive I recommend 2 tsp.
*These are fantastic to prepare a day in advance, they hold up great. Refrigerate until ready to serve.
*This recipe makes roughly 24 stuffed dates.
