Ingredients
1 lb. fresh pork chorizo*
1 yellow onion, diced
1 poblano pepper, seeded and diced
1 large garlic clove, minced
1 jalapeno, seeded and diced
1 Roma, seeded and diced
1 tbsp oil (light-tasting olive oil, avocado oil, or vegetable oil)
2 tbsp butter
2 tbsp flour
2 ¼ cup whole milk
8 oz pepper jack, shredded
8 oz Colby jack, shredded
Salt to taste
Garnish- cilantro, radishes, jalapenos
Serve with tortilla chips

Directions
In a large pan, brown the chorizo over medium-high heat. Once browned, remove the meat from the pan and set aside. Add 1 tbsp of oil to the pan along with the chopped onion, poblano, and jalapeno, and cook for 7-8 minutes or until the vegetables begin to soften. Next, turn the heat to low, add the garlic, stir, and cook for 1 minute. If there is a lot of residual fat, drain from the pan; remove the vegetables from the pan and set aside. Over medium-low heat add the butter. Once melted, whisk in the flour, then add the milk while whisking continuously. Add the tomatoes in, bring the mixture to a simmer, and cook for 2-3 minutes or until thickened (making sure to stir frequently). Next, turn the heat off and stir in the cheese until fully combined. Add the vegetables and the chorizo back in, stirring well. Transfer the dip to a serving bowl or serve right from the pan. I like to top my dip with sliced radishes, fresh cilantro, and sliced jalapenos, and serve with tortilla chips.

Tips
*The chorizo I recommend for this recipe is fresh (soft) Mexican chorizo; not (dry) cured Spanish chorizo.
*I do not recommend pre-shredded cheese for this recipe. The anti-clumping agents added to the cheese will make the consistency quite different. Buy cheese in the block and shred.
*As the dip sits, it will thicken; you can thin it out with more milk if needed. And vice versa…if you love a thick cheesy dip; add an extra ounce or two until you reach the desired consistency.
*My dip was plenty salty. Depending on the chorizo brands you may need to add a little salt.
*If you are looking for a little extra heat, add an extra jalapeno or a touch of ground cayenne pepper. This dip is mild in heat level.
