3 large strawberries + more for garnish
2 large basil leaves + more for garnish
1 oz fresh lime juice + lime slices for garnish
3 oz Lynfred Strawberry Wine
4 oz white rum
Agave or simple syrup (optional)
Ice
Club soda, chilled
In a cocktail shaker, add the strawberries, basil leaves, and lime juice. Muddle well. Add the strawberry wine, agave or simple syrup (if using), rum, and a few ice cubes. Shake well. Pour into your desired glass over ice, then top with chilled club soda. Garnish with lime slices, fresh basil, and additional strawberries.
*This recipe makes 1 cocktail.
*If your strawberries aren’t quite ripe, you may want to add a little sweetness. I used about ½ teaspoon of agave in mine. For even more strawberry flavor, try making the strawberry simple syrup below. It adds both sweetness and an extra burst of fresh strawberry flavor (see recipe below).
*I used the built-in strainer on my cocktail shaker. If you prefer to remove all of the strawberry seeds, strain the cocktail through a fine-mesh strainer before serving.
*I prefer a stronger cocktail, so I served mine in a rocks glass with just a splash of club soda. For a lighter, more traditional mojito, serve it in a highball glass and top with additional club soda.
Strawberry Simple Syrup
1 cup fresh strawberries, hulled and sliced
1 cup granulated sugar
1 cup water
Combine the strawberries, sugar, and water in a small saucepan over medium heat. Bring to a gentle simmer, stirring occasionally until the sugar has completely dissolved. Reduce the heat and simmer for 10–15 minutes, gently pressing the strawberries with the back of a spoon to release their juices. Remove from the heat and let cool for about 15 minutes. Strain through a fine-mesh sieve, pressing lightly on the strawberries to extract as much syrup as possible. Discard the solids and refrigerate the syrup in an airtight container for up to 2 weeks.
