Ingredients
2 oz vanilla vodka
1-2 oz strawberry puree
1 egg white
3 oz Lynfred Vin de City Sparkling (demi-sec), chilled
Ice
Edible pink glitter, optional

Directions
Add the vodka, strawberry puree, and egg white to a cocktail shaker. Shake very well for 30 seconds. Then add a few ice cubes and shake again for 15-20 seconds. Strain the cocktail into a coupe glass. The frothy top should naturally separate. Then, carefully pour the Lynfred sparkling wine alongside the glass, to maintain the foam. Sprinkle the top of the cocktail with edible glitter.

*This recipe makes 1 cocktail.
*Strawberry puree is so easy to make. I like to use frozen strawberries. Add 4-5 large, thawed, strawberries plus a few teaspoons of water, and add to a blender. Blend on high until smooth, and then pour the mixture through a fine mesh strainer. If you prefer a sweeter puree, add a touch of honey or granulated sugar during the blending process. I did not use any sweetener in this cocktail; this is strictly personal preference.
*I used 1.5 oz of the puree in my cocktail. If you like a lot of strawberry flavor, add a touch more.
*Raspberries would also be fantastic in this cocktail. Just swap out the strawberry puree for raspberry puree.
