Yield 4 people
1 ea navel orange, peeled, sliced round disk
1 ea cara cara oranges, peeled, sliced round disk
1 ea grapefruit, peeled, sliced round disk
½ ea fennel bulb, cored thinly sliced
1 Tbsp fennel fronds
1 ea avocado, ripe, sliced
½ cup goat cheese crumbles
1 ea lemon, juiced
1 ea orange, juiced
½ cup EVOO
Salt and Pepper
Combine lemon juice, orange juice, fennel fronds and EVOO in a bowl and whisk until it comes together. Add salt and pepper to taste. Set aside.
Then in another bowl, combine all the citrus and pour vinaigrette until well coated. Arrange on plate. Garnish with goat cheese, avocado. Enjoy!
